  • ½ cup freshly grated Parmesan cheese
  • ¼ cup cornstarch
  • Salt and pepper to taste
  • 2 tablespoons garlic butter
  • 12 cups shredded cheddar cheese

Instructions

  1. Squeeze moisture from the grated zucchini using a kitchen towel.
  2. In a mixing bowl, combine the drained zucchini with egg, Parmesan, cornstarch, salt, and pepper; mix until dough-like.
  3. Heat garlic butter in a skillet over medium heat. Shape half of the mixture into patties and cook for 3–4 minutes per side until golden.
  4. For assembly, place shredded cheddar on one patty, top with another patty, and cook until the cheese melts (about 3 minutes).
  5. Remove from the skillet, let cool slightly, slice, and serve warm.
