  • 1/2 cup chopped pecans or walnuts
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce (or mashed banana)
  • 1 3/4 cups non-dairy mylk
  • 2 flax eggs
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (or other fruit)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. Prepare flax eggs by mixing ground flaxseed with water; let sit for 5 minutes.
  3. In a large bowl, mix dry ingredients: oats, nuts, cinnamon, nutmeg, baking powder, and salt.
  4. In another bowl, whisk together wet ingredients: applesauce, non-dairy mylk, flax egg mixture, maple syrup, and vanilla.
  5. Combine wet and dry mixtures and gently fold in blueberries.
  6. Pour into prepared pan and bake for 35–45 minutes until nearly set.
  7. Let cool briefly before serving.
