  • 1/2 cup dairy-free chocolate chips
  • 1/2 cup + 1 tbsp cocoa powder, unsweetened
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 tsp salt
  • 1 tsp instant coffee powder (optional)
  • 1 1/4 cups shredded zucchini, tightly packed
  • 1/2 cup nut butter of choice
  • 1/4 cup plant-based milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 360°F (182°C) and prepare your loaf pan by lining it with parchment paper or greasing it with vegan butter or oil.
  2. In a food processor, blend rolled oats, sweetener, cocoa powder, baking powder, baking soda, salt, and optional instant coffee until well combined.
  3. Add shredded zucchini, nut butter, plant-based milk, and vanilla extract to the dry mixture. Blend until smooth.
  4. Gently fold in dairy-free chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle more chocolate chips on top.
  6. Bake for 35-40 minutes; check doneness with a toothpick.
  7. Allow brownies to cool completely before slicing.
