  • 1 brick firm tofu
  • 2 cups panko breadcrumbs
  • 1 tsp pepper
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1 tsp dried parsley
  • 3 tbsp olive oil
  • 1/4 cup cornstarch
  • 1/2 cup soy milk
  • 1 tsp apple cider vinegar
  • 12 small gluten-free tortillas
  • 1 head of romaine, chopped
  • 1 tomato, diced
  • 3/4 cup vegan cheese, shredded (colby jack or cheddar)
  • 1/2 cup vegan mayo
  • 1 tbsp lemon juice
  • 1 tbsp unsweetened soy milk
  • 1 tbsp dill, chopped
  • 1 tbsp parsley, chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Instructions

  1. Press the firm tofu for 15 minutes to eliminate excess moisture.
  2. Slice the tofu into 1/4 inch slabs.
  3. Set up three bowls: one with cornstarch; one with a mix of soy milk and apple cider vinegar; and another with panko breadcrumbs mixed with seasonings.
  4. Coat each tofu slab first in cornstarch, then the wet mixture, followed by the panko mixture.
  5. Bake at 425°F for 30 minutes, flipping halfway through for even crispiness.
  6. While baking, combine ranch dressing ingredients in a bowl.
  7. Warm tortillas on a skillet for easy assembly.
  8. Layer lettuce, tomato, cheese, ranch dressing, and one tofu finger on each tortilla before folding.
