  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 medium rutabaga, cut into chunks
  • 4 large potatoes, chopped
  • ¼ head green cabbage, shredded
  • 9 oz vegan beef or portobello mushrooms (optional)
  • 330 ml Guinness
  • 4 cups vegetable stock
  • ¼ cup soy sauce

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear the vegan beef or mushrooms until golden; set aside.
  3. Lower the heat to medium and sauté onions, carrots, and celery until softened. Add garlic.
  4. Stir in flour and cook briefly before adding Guinness while stirring.
  5. Mix in rutabaga, potatoes, cabbage, stock, soy sauce, salt, pepper, sugar, and herbs.
  6. Bring to a boil; reduce heat and simmer uncovered for about 45–50 minutes until potatoes are tender.
  7. Return seared protein to the stew for the last ten minutes of cooking.
  8. Serve hot and enjoy!
