  • 1 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, oat flour, and salt. Stir in melted coconut oil, maple syrup, and vanilla until combined. Spread this mixture evenly in a greased 8×8 baking dish.
  3. In a pot, combine berries, maple syrup, and water over medium heat until softened. Mash the berries slightly and stir in cornstarch until thickened. Remove from heat and allow to cool.
  4. For the crumble topping, mix oats, oat flour, almond flour, salt, melted coconut oil, maple syrup, and vanilla until crumbly.
  5. Pour the berry mixture over the base layer in the baking dish and sprinkle with crumble topping. Bake for 25 minutes or until golden brown.
  6. Let cool completely before cutting into squares.
