  • 3/4 pound lean ground turkey
  • 4 garlic cloves (minced)
  • 1 cup canned crushed tomatoes
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons ground cumin (divided)
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 + 1/8 teaspoon salt
  • 1/4 + 1/8 teaspoon ground pepper
  • 1/4 cup grated pepper Jack cheese (optional)
  • 2 tablespoons minced flat-leaf parsley

Instructions

  1. Pierce sweet potatoes with a fork and microwave on HIGH for about 8-10 minutes until tender.
  2. Once cooled, cut in half lengthwise and scoop out the flesh into a bowl. Mash with olive oil, cumin, salt, and pepper.
  3. In a skillet, cook ground turkey until browned. Add garlic and spices; mix in crushed tomatoes until heated through.
  4. Fill the potato skins with the turkey mixture, top with cheese if desired, and broil for about 30 seconds until melted.
  5. Garnish with parsley before serving.
