  • 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 ounces cream cheese, room temperature
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 1/2 tsp pure vanilla extract
  • 2 egg yolks
  • 2 cups semi-sweet chocolate chips

Instructions

  1. In a medium bowl, whisk together gluten-free flour, xanthan gum, baking soda, and salt; set aside.
  2. In a stand mixer, combine cream cheese and melted butter. Add brown sugar and sugar; mix on medium speed for about 2 minutes until well blended.
  3. Add vanilla extract and egg yolks one at a time while mixing on low-medium speed until fully combined.
  4. Gradually add the dry mixture to the wet ingredients; mix on low speed just until combined.
  5. Fold in chocolate chips by hand or mix on low until evenly distributed.
  6. Cover the mixing bowl with plastic wrap and refrigerate dough for at least four hours (or up to four days).
  7. Preheat oven to 375°F (190°C) and line cookie sheets with parchment paper.
  8. Using a cookie scoop, place mounds of dough spaced several inches apart on prepared sheets.
  9. Bake for approximately 11-12 minutes or until edges are set and lightly browned; centers will firm as they cool.
  10. Let cookies sit for 2-3 minutes before transferring to a cooling rack.
