Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion, red bell pepper, and jalapeño; sauté until the onions are translucent.
  2. Add sweet potatoes, cumin, garlic, smoked paprika, salt, and pepper; stir well. Cook for about 10 minutes until sweet potatoes are fork-tender and slightly browned.
  3. Stir in black beans until combined. Create four wells in the mixture with a spatula and crack an egg into each well.
  4. Cover the skillet and cook until eggs reach your desired doneness (about 5–7 minutes).
