  • 2 Sweet Potatoes, quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream (or coconut milk for a dairy-free option)
  • Juice and zest of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place quartered sweet potatoes and cored apple on a greased baking sheet.
  3. Roast in the oven for about 40 minutes until tender.
  4. Allow to cool slightly before peeling the sweet potatoes.
  5. In a soup pot over medium heat, warm olive oil and sauté onion, celery, bay leaf, and carrot until tender.
  6. Remove bay leaf and add chicken broth along with roasted sweet potato and apple pieces.
