  • 1 medium spaghetti squash
  • 4 tsp olive oil
  • Sea salt
  • 2 cloves garlic
  • 1/2 lb ground beef
  • 1/2 cup marinara sauce
  • 2/3 cup ricotta cheese
  • 1/3 cup grated parmesan cheese
  • 2/3 cup mozzarella cheese (shredded)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half, scoop out seeds, drizzle with olive oil, and sprinkle with sea salt.
  2. Place cut-side down on a baking sheet and roast for 30-35 minutes until tender. Allow to cool slightly.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Brown the ground beef and season with salt and pepper, then stir in marinara sauce.
  4. In a mixing bowl, combine ricotta, parmesan, and half of the mozzarella.
  5. Mix cooked spaghetti strands into the meat mixture and fold in cheese blend. Spoon filling back into the squash halves.
  6. Top with remaining mozzarella and bake for another 10-15 minutes until bubbly.
