  • 1 cup red lentils
  • 1 bunch parsley (chopped)
  • 1 onion (diced)
  • 4 tablespoons psyllium husks
  • 4 tablespoons nutritional yeast flakes
  • 2 bell peppers (chopped)
  • 1/2 cup chickpea flour
  • 2 teaspoons smoked paprika
  • 1 teaspoon spicy paprika
  • 1/2 teaspoon chili flakes
  • sea salt and ground pepper (to taste)
  • oil (for frying)

Instructions

  1. Cook the red lentils in a large pot covered with water for about 15 minutes until soft. Strain well.
  2. In a mixing bowl, mash the strained lentils until smooth.
  3. Combine mashed lentils with parsley, onion, psyllium husks, nutritional yeast, bell peppers, chickpea flour, spices, and seasoning. Mix until sticky yet moldable.
  4. Spray a non-stick frying pan with oil. Shape the mixture into patties and fry each side for about 2 minutes until golden brown.
