  • 2.53 pound spaghetti squash
  • 3 tablespoons salted butter (divided)
  • 4 garlic cloves (minced)
  • 1 pound large raw shrimp (peeled and deveined)
  • 5 ounces baby spinach
  • ½ cup low sodium vegetable broth
  • Juice of ½ lemon
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the spaghetti squash into rings, arrange on the baking sheet, and brush with 1 tablespoon melted butter. Roast for 30-40 minutes until tender.
  3. In a skillet, melt the remaining butter over medium heat. Sauté minced garlic and crushed red pepper until fragrant.
  4. Add shrimp to the skillet, cooking until opaque; then set aside.
  5. Sauté spinach in the same skillet until wilted, then add vegetable broth and lemon juice to simmer slightly.
  6. Combine shrimp with the sautéed spinach and add cooked spaghetti squash strands; gently toss to combine.
