  • 2 tablespoons psyllium husk powder

  • ¼ teaspoon baking powder
  • ¾ cup + 2 tablespoons very warm water
  • 2 tablespoons oil (canola, vegetable, or olive oil)

Instructions

  2. Gradually add warm water and oil while mixing until a dough forms (about 1 minute). If using a bowl, knead by hand until well mixed.
  3. Shape the dough into a ball, cover with plastic wrap, and let it rest for 10 minutes.
  4. Divide the dough into six equal portions and keep covered while rolling out each tortilla.
  5. On parchment paper, flatten each ball into a thick disc then roll into circles about 6 ½ inches in diameter.
  6. Heat an ungreased nonstick skillet over medium-high heat for about 5 minutes.
  7. Cook each tortilla for approximately 45 seconds on one side until brown spots appear; flip and cook an additional 15-20 seconds.
