  • 2 tbsp Avocado or vegetable oil
  • 2 cups Onion (chopped)
  • 2 cups Carrots (peeled and chopped)
  • 4 cloves Garlic (minced)
  • 1 tbsp Sage (chopped)
  • 1 tbsp Thyme (chopped)
  • 32 oz Chicken Broth
  • 8 cups Kale (chopped)
  • Juice and zest of 2 Lemons
  • Parmesan cheese (for garnish)

Instructions

  1. Remove the skin, bones, and cartilage from the rotisserie chicken. Shred the meat into bite-sized pieces.
  2. Heat oil in a large pot over medium heat. Add chopped onions and carrots; sauté until soft, about 5-7 minutes.
