  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • Chilli flakes (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the butternut squash, then place it in a baking dish.
  3. Add garlic cloves (unpeeled), thyme, and olive oil; season with salt and pepper.
  4. Place feta in the center of the dish and drizzle with more olive oil.
  5. Roast for about 25 minutes until the pumpkin is tender and feta is soft.
  6. Meanwhile, cook pasta according to package instructions in salted water.
  7. Mash roasted garlic, crumble feta into the dish, then mix in spinach and drained pasta along with reserved pasta water until creamy.
  8. Serve topped with chilli flakes and walnuts for extra crunch.
