  • 1/4 cup oat flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg (at room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • 1/2 tablespoon water
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In a bowl, mix together the all-purpose flour, oat flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until combined.
  4. Gradually fold the wet ingredients into the dry mixture until just combined.
  5. Fill each cavity of the donut pan halfway with batter using a piping bag.
  6. Bake for 6-7 minutes or until donuts spring back when touched.
  7. Cool on a wire rack before glazing.
  8. Whisk together powdered sugar, maple syrup, dark corn syrup, water, and cinnamon until smooth for the glaze.
  9. Dip the tops of cooled donuts in glaze and let set.
