  • 1/3 cup oil (canola or vegetable)
  • 3/4 cup pumpkin puree (not pie filling)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 1 cup cream cheese frosting

Instructions

  1. Preheat your oven to 180C (350F) and grease a 9-inch cake pan.
  2. In a mixing bowl, combine flour, baking powder, salt, pumpkin pie spice, and cinnamon. Stir until well mixed.
  3. Add sugar, oil, pumpkin puree, maple syrup, vanilla extract, and water to the dry ingredients. Mix until smooth.
  4. Pour the batter into the greased pan and bake for about 30 minutes or until a skewer inserted in the center comes out clean.
