  • 1 cup unsweetened shredded coconut
  • 1/8 tsp salt (optional)
  • 1 cup coconut cream
  • 1 cup dark chocolate chips (60-75% dark)
  • 1/2 cup creamy almond butter
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Line the bottom of a 6" round springform pan with parchment paper.
  2. In a food processor, blend pecans, coconut, and salt until clumping together.
  3. Press the crust mixture into the prepared pan evenly.
  4. In a small saucepan over low heat, melt chocolate chips with coconut cream while stirring.
  5. Remove from heat and whisk in almond butter until smooth.
  6. Pour the filling over the crust and spread evenly.
  7. Optionally top with chopped nuts or cacao nibs.
  8. Refrigerate for at least 2 hours to set before slicing.
