  • 8 oz cream cheese (room temperature)
  • ¾ cup plain 0% Greek yogurt (room temperature)
  • ⅓ cup granulated sugar
  • 1 egg + 1 yolk
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • Optional: lemon zest and arrowroot starch or cornstarch

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with cupcake liners.
  2. In a food processor, pulse graham cracker crumbs until fine. Add melted butter and mix until well combined. Divide the mixture among muffin liners and press down to form the crust.
  3. Bake the crust for 5-6 minutes and let cool.
  4. In a mixing bowl, beat cream cheese until smooth. Mix in Greek yogurt, egg, sugar, vanilla extract, lemon juice, zest (if using), and arrowroot starch until just combined.
  5. Pour the filling evenly into the crusts and bake for another 17-20 minutes until set.
  6. Allow cooling at room temperature for 30 minutes before chilling in the refrigerator for at least three hours.
