  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup little tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Rinse and drain chickpeas; add them to a large mixing bowl.
  2. Chop cucumbers, red onion, red bell pepper, and tomatoes into bite-sized pieces. Mince garlic and chop herbs.
  3. Combine chopped ingredients and olives with chickpeas in the bowl.
  4. In a separate small bowl, whisk olive oil, lemon juice, minced garlic, salt, and pepper until blended.
  5. Pour dressing over the salad mixture and toss gently to coat evenly.
