  • 6 slices turkey bacon (cut into ½” pieces)
  • 1 medium sweet onion (diced)
  • 2 stalks celery (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 large head cauliflower (chopped into florets)
  • 34 cups chicken stock
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 bay leaf
  • Chopped chives or green onions for garnish
  • Sour cream and shredded cheddar cheese for optional topping

Instructions

  1. In a Dutch oven or soup pot over medium-high heat, cook the turkey bacon until crispy, about 7–8 minutes. Remove and drain on paper towels.
  2. In the same pot with remaining fat, sauté diced onion and celery until softened (about 8–10 minutes). Add minced garlic and cook for another minute.
  3. Deglaze the pot with ½ cup of chicken stock, scraping up any browned bits.
  4. Add cauliflower florets and remaining stock (totaling about 3 cups). Season with salt, pepper, and bay leaf; bring to a simmer. Cook until cauliflower is tender (15–20 minutes).
  5. Blend soup with an immersion blender until smooth, adjusting consistency with additional stock if needed.
  6. Serve warm, garnished with chives, sour cream, or cheese.
