  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Slice the chicken breasts and prepare the vegetables by halving the cherry tomatoes and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook until golden brown and cooked through (about 5–7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds before adding halved cherry tomatoes; sauté until softened (around 2 minutes).
  4. Pour in chicken broth, bring to a simmer, then stir in cream along with lemon zest and juice (remove from heat briefly before adding citrus).
  5. Add potato gnocchi to the sauce and cook for about 3–4 minutes until tender. Toss in baby spinach just before finishing.
  6. Return cooked chicken to the skillet, season with additional salt and pepper if desired. Garnish with fresh basil or parsley before serving.
