Made with fresh mini bell peppers filled with a savory tuna mixture and topped with melty cheese, they are not only easy to prepare but also incredibly satisfying.

  • 12 mini bell peppers
  • 12 oz canned tuna (drained)
  • 2 tbsp mayonnaise (or Greek yogurt)
  • 3 tbsp Dijon mustard
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • Cheddar cheese (to taste, about 3 slices)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine drained tuna, mayonnaise (or Greek yogurt), Dijon mustard, garlic salt, and onion powder. Mix until well blended.
  3. Halve each mini bell pepper lengthwise and remove seeds.
  4. Place halved peppers on a baking sheet and bake for 15 minutes, flipping halfway through.
  5. Remove from oven and fill each pepper half with the tuna mixture. Top generously with cheddar cheese.
  6. Return to the oven and bake for an additional 5-7 minutes until cheese is melted and bubbly.
