  • 3 tablespoons butter, softened
  • 1 tablespoon olive oil
  • 3 garlic cloves, peeled
  • 1 bunch of parsley, stems trimmed
  • 10 cherry tomatoes, halved
  • 2 cups baby spinach
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a small blender, pulse together butter, olive oil, garlic, parsley, salt, and pepper until smooth. Set aside.
  2. Heat a non-stick skillet over medium-high heat. Sauté chicken for about 3 minutes until browned.
