  • 1/3 cup cocoa powder
  • 1/4 cup heavy cream
  • 1/4 cup sour cream
  • 1 tsp vanilla
  • 3/4 cup sugar-free chocolate chips
  • 4 oz heavy cream
  • 2 oz cream cheese (for crust)
  • 1 tbsp Vegan Gelatin
  • 1/2 tsp vanilla (for crust)
  • 2 tsp cold water (for gelatin)
  • 2 tsp Vegan Gelatin (for cheesecake)
  • 2 tbsp hot water (for gelatin)
  • 1/4 tsp baking soda

Instructions

  1. Prepare the crust by combining almond flour, cocoa powder, and sweetener in a bowl. Melt butter and mix it in until well combined. Press into a 9-inch springform pan.
  2. For the filling, blend softened cream cheese until smooth. Add sweetener, cocoa powder, heavy cream, sour cream, and vanilla; mix until fully incorporated. If using gelatin for firmness, dissolve it in cold water first before adding.
  3. Pour the cheesecake filling over the prepared crust and smooth out the top. Chill in the refrigerator for at least 4 hours to set.
  4. For the ganache topping, heat heavy cream until just simmering, then stir in sugar-free chocolate chips until melted and smooth. Let cool slightly before pouring over the chilled cheesecake.
