  • ¼ cup confectioners' sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
  2. In a mixing bowl, beat together the butter and ¾ cup of confectioners' sugar until smooth.
  3. Add in the egg, vanilla extract, and almond extract; mix until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until well incorporated.
  6. Form the dough into 1-inch balls and place them on the prepared baking sheet with about 2 inches between each ball.
  7. Bake in the preheated oven for approximately 10 minutes or until firm but still pale in color.
  8. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
  9. Roll each cooled cookie in the remaining confectioners' sugar to coat.
