  • 2 apples
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bake un-pierced sweet potatoes on a baking sheet for 40-45 minutes until soft. Cool before peeling and slicing into 1/2-inch rounds.
  3. Peel, slice, and core the apples; set aside.
  4. In an 8×8 or 9×9 baking dish, layer apple slices and sweet potato slices alternately.
  5. In a small saucepan, melt together honey, butter, cinnamon, and vanilla over low heat until combined.
  6. Pour the honey mixture over the layered fruits and sprinkle with toasted pecans if desired.
  7. Bake at 350°F (175°C) for 15-20 minutes until heated throughout.
