  • 1 1/4 lbs boneless chicken breasts
  • 10 oz zucchini
  • 10 oz yellow squash
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and freshly ground black pepper
  • 3 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons fresh lemon juice

Instructions

  1. Dice chicken into small pieces and slice zucchini and squash.
  2. In a bowl, mix chicken with olive oil, salt, pepper, Italian seasoning, and garlic powder.
  3. Heat skillet over medium-high heat; add butter and cook chicken until golden brown, about 5-7 minutes.
  4. Set chicken aside; in the same skillet, add remaining butter along with zucchini and squash. Sauté until tender yet crisp (about 3-5 minutes).
  5. Return chicken to the skillet, add lemon juice, and cook together for another minute.
  6. Serve topped with parmesan cheese and parsley.
