  • 1/2 cup brown sugar
  • One 8 oz. can crushed pineapple with juice
  • 1/3 cup shredded coconut
  • 8 oz. whipped topping (thawed)

Instructions

  1. In a large bowl, combine warm rice and brown sugar until the sugar dissolves.
  2. Add the crushed pineapple with juice and mix well.
  3. Cover and chill in the refrigerator for at least one hour.
  4. Just before serving, gently fold in shredded coconut and thawed whipped topping until evenly combined.
