  • 2 large eggs
  • 1 cup granulated sugar (divided)
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • 1/2 cup sorghum flour
  • 1/2 cup brown rice flour
  • 1/4 cup coconut flour
  • 1 tbsp tapioca starch
  • 3 cups shredded coconut
  • 3/4 cup raspberry preserves

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and 1/2 cup granulated sugar until fluffy. Add eggs, milk, and vanilla; mix well.
  3. In another bowl, whisk together the flours, tapioca starch, baking powder, xanthan gum, and salt. Gradually add to the wet mixture until combined.
  4. Spread the base into a greased 9×13-inch baking pan.
  5. Layer raspberry preserves evenly over the base.
  6. For the topping, combine eggs with remaining sugar in a bowl; mix in shredded coconut and melted butter until well blended.
  7. Spread the coconut mixture over the raspberry layer.
  8. Bake for about 40 minutes or until golden brown on top.
  9. Allow to cool completely before slicing into squares.
