  • 1/2 cup tapioca starch
  • 1 1/2 tbsp sugar
  • 1 tbsp instant dry yeast
  • 2 tsp kosher salt
  • 1 tsp xanthan gum
  • 1 cup warm water (90-100°F)
  • 1 egg (plus 1 egg white)
  • 1 tsp white vinegar

Instructions

  1. In a mixing bowl or stand mixer, combine gluten-free flour, tapioca starch, sugar, yeast, salt, and xanthan gum.
  2. Add warm water, egg, egg white, and vinegar. Mix until well combined and sticky.
  3. Cover with plastic wrap and chill in the refrigerator for 1 hour (or overnight).
  4. Preheat oven to 450°F. Prepare a baking sheet lined with parchment paper.
  5. Dust work surface with tapioca starch; shape chilled dough into baguette forms.
  6. Let rise until doubled in size (30 minutes to 1.5 hours).
  7. Score the tops of loaves and bake for 23-25 minutes until golden brown.
