  • 12 ounces brown rice noodles
  • 1 tablespoon oil (neutral)
  • 6 cloves garlic
  • 1/41/3 cup low sodium soy sauce or tamari
  • 2 tablespoons veggie broth
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons tahini
  • 2 teaspoons sriracha
  • 1/2 teaspoon ground ginger

Instructions

  1. Boil the noodles in a large pot until al dente, then drain.
  2. Mince the garlic finely and sauté in a frying pan with your chosen oil until golden.
  3. In a bowl, whisk together soy sauce, veggie broth, rice vinegar, sesame oil, honey or maple syrup, tahini, sriracha, and ginger until smooth.
  4. Pour the sauce into the pan with garlic and simmer for 2-3 minutes.
  5. Combine the cooked noodles with the sauce in the frying pan, mixing thoroughly to coat evenly.
  6. Serve garnished with scallions or crushed peanuts as desired.
