Ingredients

  • 2 ⅔ cups pumpkin (cubed)
  • ⅔ cups starchy potato (cubed)
  • ½ tsp salt
  • ¾ cup flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  1. Peel and cube the pumpkin and potato; steam or boil until tender, about 15 minutes.
  2. Drain excess water and mash the vegetables in a mixing bowl until smooth.
  3. Stir in salt and flour until a soft dough forms; avoid overmixing.
  4. On a floured surface, divide dough into portions, rolling each into ropes about ½ inch thick and cutting into bite-sized pieces.
  5. Boil salted water; add gnocchi in batches. They’re done when they float (about 2-4 minutes). Remove with a slotted spoon.
  6. In a skillet, melt vegan butter over medium heat, add sage leaves, sauté until fragrant and toss cooked gnocchi to coat.
