  • 2 cloves garlic, minced or pressed
  • 2 teaspoons creole all purpose seasoning
  • 1 pound 93/7 ground beef
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup sliced green onions
  • 2 cups canned coconut milk
  • 3 Tablespoons corn starch
  • 2 pound package tater tots
  • 1 7 ounce package Daiya cheese

Instructions

  1. Heat olive oil in a large skillet over medium/low heat.
  2. Add chopped zucchini, mushrooms, bell pepper, and creole seasoning; cook for 10 minutes until softened.
  3. Preheat oven to 400°F. Add ground beef, garlic powder, onion powder, and black pepper; cook until browned.
  4. Whisk cornstarch with coconut milk until smooth; pour into skillet and stir until thickened (1-2 minutes).
  5. Transfer mixture to a 9×13-inch glass baking pan; top with dairy-free cheese and tater tots.
  6. Bake for 25-30 minutes until golden brown and heated through.
  7. Cool for 10 minutes before serving; garnish with green onions.
