  • 1 lb ground beef (80/20)
  • 3 T taco seasoning (sugar-free)
  • 2/3 cup heavy whipping cream
  • 4 large eggs
  • 1/3 cup chunky salsa
  • 1 1/4 cup shredded cheddar cheese
  • Garlic salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch pie pan.
  2. In a skillet over medium heat, brown the ground beef until cooked through; drain excess grease.
  3. Stir in the taco seasoning until well mixed, then transfer to the greased pie pan.
  4. In a bowl, whisk together heavy cream and eggs; add salsa, one cup of cheese, garlic salt, and black pepper. Mix until smooth.
  5. Pour the egg mixture over the beef in the pie pan and sprinkle with remaining cheese.
  6. Bake uncovered for 35-40 minutes until set and golden brown.
