  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28oz can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or full-fat coconut milk)
  • 5oz fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • Dried oregano
  • Dried basil
  • Salt
  • Black pepper

Instructions

  1. Boil salted water in a large pot. Cook the gnocchi according to package directions until they float. Drain and set aside.
  2. In a skillet over medium heat, sauté chopped onion in olive oil for about 5-7 minutes until softened.
  3. Add minced garlic and tomato paste; cook for an additional minute until fragrant.
  4. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer on low heat for 15-30 minutes.
  5. Mix in heavy cream and Parmesan cheese until smooth. Then add spinach and stir until wilted.
