- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cups fresh spinach, chopped
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/2 teaspoon red pepper flakes (optional)
- Heat olive oil in a large pot over medium heat.
- Add ground chicken and cook until browned (5–7 minutes). Remove from pot.
- Sauté onion for 3–4 minutes in the same pot, then add garlic and sauté for another minute.
- Return chicken to the pot, stir in chicken broth, then add heavy cream and whole milk.
- Season with basil, oregano, salt, black pepper, and optional red pepper flakes; simmer for 10–15 minutes.
- Stir in cheeses until melted and then add spinach, carrot, and celery; cook an additional 5–7 minutes.
- Adjust seasoning if necessary and serve hot.
