  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken and cook until browned (5–7 minutes). Remove from pot.
  3. Sauté onion for 3–4 minutes in the same pot, then add garlic and sauté for another minute.
  4. Return chicken to the pot, stir in chicken broth, then add heavy cream and whole milk.
  5. Season with basil, oregano, salt, black pepper, and optional red pepper flakes; simmer for 10–15 minutes.
  6. Stir in cheeses until melted and then add spinach, carrot, and celery; cook an additional 5–7 minutes.
  7. Adjust seasoning if necessary and serve hot.
