  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef with diced onion until cooked through. Add minced garlic and sauté for another minute.
  2. Pour in the beef broth and add the diced tomatoes, corn, black beans, potatoes, and spices (smoked paprika, chili powder, cumin). Stir well.
  3. Bring to a boil, then reduce heat and let simmer for about 30 minutes until potatoes are tender.
  4. Stir in heavy cream (or half-and-half) and shredded cheddar cheese until melted.
  5. Serve hot with toppings of sliced green onions, extra cheese, and crushed tortilla chips.
