  • 4 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 1½ cups superfine almond flour
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup chopped cooked turkey bacon
  • 2 tsp baking powder
  • 1 (1 oz) package ranch dressing mix

Instructions

  1. Preheat your oven to 400ºF.
  2. In a microwave-safe bowl, melt cream cheese and mozzarella together for 1 minute on HIGH; stir until smooth.
  3. Mix in baking powder, eggs, ranch dressing mix, and almond flour until well combined.
  4. Fold in cheddar cheese and turkey bacon until evenly distributed.
  5. Spray an iron skillet with cooking spray and form dough into 11-12 equal balls, placing them in the skillet. Chill for 10 minutes.
  6. Bake for 20-25 minutes until golden brown. Optionally brush with melted butter and sprinkle with dried parsley before serving.
