  • 2 teaspoons vanilla extract
  • 1/2 cup + 1 tablespoon cocoa powder
  • 1 cup + 1 tablespoon gluten-free all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/21 teaspoon espresso powder (optional)
  • 1/2 cup chocolate chips
  • 1 cup powdered sugar

Instructions

  1. Cream together the butter and sugars until light and fluffy.
  2. Beat in the eggs one at a time, followed by the vanilla extract.
  3. In another bowl, whisk together dry ingredients (cocoa powder, gluten-free flour, baking powder, baking soda, salt).
  4. Gradually combine the dry mixture with the wet mixture until fully combined.

  6. Chill dough in the refrigerator for at least 2 hours.
  7. Preheat oven to 350°F.
  8. Roll chilled dough into balls and coat in a mixture of powdered sugar and regular sugar.
