  • ½ cup Olive oil
  • 4 cloves Garlic, minced
  • 1 cup Fresh parsley, chopped
  • ¼ cup Red apple vinegar
  • ½ teaspoon Red pepper flakes
  • Salt and pepper to taste
  • 1 cup Mayonnaise or Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 cup Diced tomatoes
  • 2 cups Fresh greens (spinach or arugula)

Instructions

  1. Marinate chicken: Whisk olive oil, minced garlic, chopped parsley, red apple vinegar, salt, and pepper in a bowl. Coat the chicken breasts and marinate for at least 30 minutes or overnight.
  2. Prepare chimichurri sauce: Blend parsley, garlic, red pepper flakes, vinegar, olive oil, and salt until chunky but combined.
  3. Make garlic sauce: Mix mayonnaise (or yogurt), lemon juice, minced garlic, and herbs until smooth; chill.
  4. Grill chicken: Preheat grill to medium-high heat and cook marinated chicken for 5–7 minutes on each side until cooked through. Let rest before slicing.
  5. Assemble: In bowls, layer fresh greens, sliced grilled chicken, chimichurri sauce, diced tomatoes, and garlic sauce.
