  • 1 small head of cauliflower
  • 1 can (15 oz) chickpeas
  • 1/2 medium red onion
  • Chipotle peppers in adobo sauce
  • Plant-based yogurt
  • Avocado oil
  • Fresh cilantro
  • Pita bread

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine sliced onions, garlic, lime zest, lime juice, vinegar, maple syrup, cilantro, and salt; marinate in the fridge.
  3. Pat dry chickpeas and toss with avocado oil and salt on a baking tray; roast for 20 minutes.
  4. On another tray, coat cauliflower with oil and seasonings; roast for 30 minutes until golden brown.
  5. Blend chipotle peppers, yogurt, mayo, lime juice/zest, maple syrup, garlic, and cilantro until smooth.
  6. Combine roasted veggies in a bowl with chipotle sauce; toss gently.
  7. Warm pita bread and assemble wraps with chickpea mixture; enjoy!
