  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper; cook for 5-6 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for 1 minute, then add mushrooms and cook until softened (about 5 minutes). Stir in spinach until wilted (2-3 minutes).
  4. Add heavy cream and chicken broth to the skillet; simmer for 3-4 minutes until slightly thickened.
  5. Place cooked chicken in the baking dish; pour sauce over chicken and sprinkle cheeses on top.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
