  • 6 strips turkey bacon (plus drippings)
  • 5 cups chicken broth
  • 1 cup half-and-half
  • 1 ½ lbs Yukon Gold potatoes (or red potatoes)
  • 1 small onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • Seasonings: garlic, hot sauce, Worcestershire sauce, dried herbs

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Reserve drippings.
  2. Sear seasoned chicken in olive oil until golden brown; set aside.
  3. Sauté onions, carrots, and celery in reserved drippings for 5 minutes.
  4. Add garlic and seasonings; cook briefly before stirring in flour.
  5. Gradually add chicken broth while stirring; bring to a simmer.
  6. Incorporate half-and-half and cubed potatoes; boil then reduce to simmer.
  7. Add seared chicken back into the pot; cook until potatoes are tender.
  8. Stir in shredded cheddar cheese until melted; garnish with green onions.
