  • 150 ml milk
  • 4 chai tea bags
  • 135 g unsalted butter
  • 135 g light brown sugar
  • 2 large eggs
  • 200 g self-raising flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • For frosting: 200 g unsalted butter, 400 g icing sugar, 1/4 tsp cinnamon, 1/8 tsp ground cardamom, 1/8 tsp ground cloves, 1/2 tbsp demerara sugar

Instructions

  1. Make chai tea infused milk by warming milk and steeping chai bags for 10-15 minutes.
  2. Preheat your oven to 160C (fan) or 180C (conventional).
  3. Cream softened butter and light brown sugar until smooth.
  4. Add eggs and vanilla extract; mix until combined.
  5. Gradually incorporate dry ingredients followed by the chai tea infused milk.
  6. Spoon batter into lined cupcake cases and bake for 20-25 minutes until golden brown.
  7. For frosting, combine softened butter with icing sugar and spices; blend until fluffy.
  8. Allow cupcakes to cool completely before decorating with frosting.
