  • 1 ½ cups low-carb pulled beef
  • 2 heads cauliflower (about 700g), cut into florets
  • 2 small tomatoes, chopped
  • 1 medium green bell pepper, chopped
  • 2 green chilies or jalapeños, sliced
  • 2 teaspoons low-carb taco seasoning
  • ½ cup grated Parmesan cheese
  • 1 cup freshly grated mozzarella cheese
  • Olive oil, salt, and ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread cauliflower florets on the prepared baking sheet; brush lightly with olive oil and season with taco seasoning, salt, and pepper.
  3. Roast cauliflower for 5 to 7 minutes until slightly tender.
  4. Remove from oven and layer pulled beef, chopped tomatoes, bell pepper, Parmesan, and mozzarella over each floret. Top with sliced chilies.
  5. Return to oven and bake for an additional 10 to 12 minutes until the cheese is melted and bubbling.
