12 oz pasta (spaghetti, fettuccine, or penne)
2 large onions
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon sugar (optional, to help caramelize)
1/4 cup olive oil (for chili oil)
1 tablespoon chili flakes (adjust based on preferred spice level)
1 garlic clove, minced
1/2 teaspoon smoked paprika (optional)
1/2 teaspoon salt
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (for garnish)
Extra chili oil (for garnish)
Instructions
Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
In a skillet on medium-low heat, combine olive oil and butter. Add thinly sliced onions and a pinch of salt. Cook for 25–30 minutes until golden brown.
In another skillet, heat olive oil with chili flakes and minced garlic over low heat for about 5 minutes to infuse flavors.
Mix caramelized onions with cooked pasta in a large pot. Pour in the chili oil mixture and toss well.
