  • 12 oz pasta (spaghetti, fettuccine, or penne)
  • 2 large onions
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar (optional, to help caramelize)
  • 1/4 cup olive oil (for chili oil)
  • 1 tablespoon chili flakes (adjust based on preferred spice level)
  • 1 garlic clove, minced
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for garnish)
  • Extra chili oil (for garnish)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a skillet on medium-low heat, combine olive oil and butter. Add thinly sliced onions and a pinch of salt. Cook for 25–30 minutes until golden brown.
  3. In another skillet, heat olive oil with chili flakes and minced garlic over low heat for about 5 minutes to infuse flavors.
  4. Mix caramelized onions with cooked pasta in a large pot. Pour in the chili oil mixture and toss well.
  5. Serve garnished with fresh parsley and extra chili oil if desired.
