  • 2 cups raw sweet potato (minced)
  • 2 large eggs
  • 3/4 cup black cocoa powder
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup coconut flour
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 3/4 cup sweet potato (cubed)
  • 1/2 cup avocado
  • 1/2 cup soft medjool dates (pitted)
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two 6" springform pans with parchment paper.
  2. In a food processor, mince the sweet potato until fine, then transfer it to a blender along with all other cake ingredients. Blend until smooth.
  3. Divide the batter between the prepared pans and bake for about 45–50 minutes or until a toothpick comes out clean. Chill in the freezer while you prepare the frosting.
  4. For the frosting, steam sweet potato cubes until tender then blend with avocado, medjool dates, cocoa powder, vanilla extract, and sea salt until smooth. Chill before frosting the cooled cakes.
