  • 1 can black beans
  • 1 cup cherry tomatoes
  • 1/2 cup corn
  • 1 avocado
  • Fresh cilantro
  • Lime juice
  • Coconut yogurt

Instructions

  1. Preheat the oven to 400°F (200°C). Poke holes in sweet potatoes with a fork and place on a parchment-lined baking tray. Bake for 40-60 minutes until tender.
  2. In a mixing bowl, combine black beans, chopped tomatoes, corn, cilantro, red onion, garlic, lime juice, olive oil, sea salt, pepper, and chili flakes.
